Vegetable Pikelets

Vegetable Pikelets


Ingredients:

400g can Chickpea, drained and rinsed
200g Feta, crumbled
2 Eggs
3/4 cup Milk
1 cup of Plain flour
1/2 tsp ground Coriander
1/2 tsp ground Cumin
1/2 tsp ground Ginger
1/3 cup fresh roughly chopped Coriander
1/3 cup fresh roughly chopped Mint
1/2 cup chopped red capsicum
1/4 tsp Baking Powder 


Method:

Using your mixer tip in drained Chickpeas and crumbled Fetta and blend till all Chickpeas are broken down.
Add in the two eggs and the milk.
Then add Flour, ground spices and baking powder.
Lastly throw in your fresh Coriander and Mint and Capsicum
Give a good blend.

Using a frypan with cooking spray cook spoonfuls of batter at a time as you do regular pikelets.  You won't get alot of bubbles like normal pikelets so when you see a couple its usually time to flip over.

These are good on their own but would make great bases for horderve style foods. Smoked salmon and cream etc.  I had some here with Pastrami, tomato and Chutney.  I am thinking leftover ham and cranberry sauce at Christmas.
