Lemon and Chia Seed Muffins




Lemon and Chia Seed Muffins these are so delish you wont want to share!

Ingredients:
½ Cup Castor Sugar
¾ Cup Desiccated Coconut
2 Cups Self Raising flour
½ teaspoon Baking Powder
100g melted Butter
1 1/3 cup Milk
1 egg
1 Zest of 1 lemon
1 Teaspoon Vanilla
2 Teaspoon Chia Seeds


Method:
Start with a large bowl and mix together Sugar, Coconut, Flour and Baking Powder.

In a small bowl (I use a jug) mix together your milk and egg then add your butter.

Add the wet ingredients to the dry ingredients and mix well.

Fold in the Vanilla, Lemon Zest and Chia Seeds.



Spoon into a greased or sprayed Mini Muffin tin about ¾ full in each one. I use patty papers so they are easily removed and a bit stronger for the lunch boxes.


175 degrees Celsius fan forced for approx. 15 -20 mins or just until the start changing colour on edges.

Plum Pie in the sun, I spy EVERYONE! – Easy Plum Pie Recipe


"Each Peach Pear Plum", this is a favourite book from my childhood. I bought it to share with Miss 2 and because I still enjoy reading it, she enjoys hearing it. 

It also inspired what I planned to serve for dessert, Plum Pie!



There are a few different things you can do with this idea. I made a large pie, mini pies and even served star shaped shortcrust with dip (the plum filling).


You’ll need:
  • 600g tinned plums
  • 1 cup of caster sugar
  • Pinch of salt
  • 1/3 cup plain flour
  • 1 tsp vanilla essence
  • 1 sheet shortcrust pastry
  • 1 sweet pie base
  • 1 egg white




Preparation:
Pre-heat your oven, 160 degrees for fan forced, 180 degrees for conventional.
Precook your pie base until it’s just golden and then set it aside. Place your sheet of shortcrust pastry out to defrost on a flat surface.









Make the pie filling:
Strain the juice from the plums straight into a pot.
Remove the plums and cut them into quarters, removing the seeds as you go.
Put the plums aside for now.



Mix together the dry ingredients (sugar, flour and salt) then pour it into the pot of plum juice.
Stir it together over a medium heat until the mixture has thickened.
Remove from the heat, add the plums and vanilla essence and gently mix it all together.









Assemble:
Pour the plum filling into the pie base and be careful not to over fill it.
Cover the top of the pie with the sheet of shortcrust pastry.
Trim the excess pastry by running a knife along the edge.
Use a folk to press around the edge to seal it.
Brush your egg white over the top.
You can use the left over pastry cut-offs to make mini pies or cut out shapes. Do this by needing the pastry together then rolling it out flat.















Pop your pie in the oven on 160 degrees for approximately 30 minutes. Be careful when pulling your pie out or this can happen….




I'd LOVE to show you an amazing finished plum pie with a big slice and a dollop of fresh cream on the side… but alas, reality happened and I dropped my ‘masterpiece’ on the kitchen bench.
I wasn't going to put this in but I thought I might give you all a little chuckle and show that these things happen to all of us!

Yoghurt and Lemon Cake - Secret Recipe


Yoghurt and Lemon Cake

I love this cake - seriously you're lucky i'm sharing it. 
So keep it to yourself ok  :)


¾ cup Castor Sugar
60ml Coconut Oil
2 Eggs Separated
300g Greek Yoghurt
1 Lemon grated zest 
 1 ½ cup Self Raising Flour
1 teaspoon Baking Soda
1 tablespoon Desiccated Coconut


 
Using a mixer beat together the Coconut Oil and Sugar and then add egg yolks one at a time mixing in well.









Add in the Lemon zest and yoghurt.

Slowly mix in the Flour, Baking Soda & Coconut.

In a separate small bowl whisk the egg whites until they become soft peaks  and then fold into the cake batter. 

Pour into cake pan. I tend to use a Bundt tin


Cook at 160- 180 Celsius fan forced for about 1hr 10min.  I think sometimes the seasonal changes in the yoghurt can affect the timings as well as the differences in ovens so about an hour.







Icing:  Icing sugar and lemon juice and a little colouring. pending on the consistency you are after.

Afghan Biscuits


Afghan Biscuits not sure why they are called that and there is plenty of theories but none of that matters what does matter is the biscuit itself and here is my version of the recipe.

about 15 biscuits pending on your size :)

Biscuit Ingredients
200g Butter soft
1/2 cup Castor Sugar
1 1/4cups Plain Flour
1/4 teaspoon baking powder
1/2 teaspoon Chia seeds (optional)
1/4 cup Cocoa
2 cups Cornflakes

Biscuit Method
Cream the butter and sugar until light and fluffy.
Sift in the flour, baking powder and cocoa.
Mix in well then fold in the cornflakes and chia seeds.
Spoon onto baking paper covered trays and press tops down with back of spoon.
(I usually use my hands instead of a spoon much faster and then just use two fingers to flatten them down)


Chocolate Icing Ingredients
200g Dark Chocolate
1/2 cup Cream
25g Butter
Walnuts (traditionally they had a piece of walnut placed on top but optional)

Icing Method
Break the Chocolate into a small bowl then add the cream and butter.
Microwave on medium power for 1-2 mins until chocolate has melted. Stir every 20 seconds.
Beat until thick and then ice your biscuits finishing with the Walnut.

1970's Cartoon 40th Party

A few weeks ago we had Hubby's 40th Birthday Party with a 1970's Cartoon theme.
Here's a couple of shots i took - wish i'd taken more.


Waiting patiently for Wonder Woman to wake up. 


I made a Candy cake kinda like the Candy Bar idea.  With 1970's lollies.

Mint Patties
Wagon Wheels
Musk Sticks
Sherbies
Wizz Fizz
Musk Life Savers
Peppermint Life Savers
Choo Choo bars
Fads
Lolly Gobble Bliss Bombs
Sherbet Fountains
Redskins
Original Hubba Bubba
Mixed lollies - teeth, cola bottle etc.


I put mixed bowls of the lollies around the tables.

Candy Cake was easy I just wrapped and taped together three boxes and stuck the lollies on with folded sticky tape so you could easily pull them off.  I did find the wax coated lolly packets wouldnt stick but that didnt matter much.

I also had Red and Cola Sunny Boys. Which were of Hubby's favourite ice blocks from his school days. Triangular frozen glucose and colouring basically.



I just stuck to Red, Yellow, White and Blue Colours and tried to carry it through the party with decorations, Food napkins, plates, utensils etc, Blue and Yellow coloured Popcorn, Chocolate Crackles in Red, Blue and White Pattys with Red or Blue star on top.  Easiest colours to do.






The cake i was a bit disappointed with.  We had to go on an unplanned interstate visit the week before the party and got home two days before the party so i really didnt have time to alot of the decorations and food i wanted to. Honestly i didnt think i'd get to the cake at all but i did managed to whip up something and he was happy so thats the main thing.   The humidity on the night was awful and the characters kept losing their heads and by the end of the party they had pretty much melted.  Don't look closely at the photos you'll see my lack of time and rushing. :)





1970's Cartoon so i stayed with the theme and made Characters on top were Fred Flintstone, Roger Ramjet, Mighty Mouse and the Hulk holding the candles.  The sides were Superman and Flash Gordon. Batman and Marvin Martian. Scooby Doo Mystery Machine and The Archies.








Can't believe i didn't take a photo of my Chocolate Crackles they were so good.   No Copha. Just Rice bubbles, Desiccated Coconut and melted Chocolate.  With a Candy star on top.
